Bruschetta Chicken Bake


This is one of our favorite new recipes! I call it the Italian version of Swiss Chicken. I have made is several times and it is always wonderful. We both loved lots of flavor in our dishes and this recipe has that covered! I found the recipe on allrecipes.com which basically has any recipe you could ever dream of and some that should have never been dreamed up, ha.

3 boneless skinless chicken breast (cut in half)
1 teaspoon salt
1 (15 oz) can diced tomatoes with juice
1/2 cup water
1 tablespoon minced garlic
1 (6 oz) box chicken-flavored dry bread stuffing mix
2 cups shredded mozzarella cheese
1 tablespoon Italian seasoning

Heat oven to 400. Coat a 9x13 dish with nonstick spray. Place the cut chicken breasts in the bottom of the dish. Season with salt. In a separate bowl combine the diced tomatoes, water, garlic and stuffing mix. Sprinkle the mozzarella cheese over the chicken then sprinkle the Italian seasoning over the cheese. Spread the stuffing mixture on top. Bake for 35 minutes.
